Satisfied

I woke up and had one of my favorite breakfasts – empanadas! 

One of the things I remember most from my time in Costa Rica last October was the food. We had fresh pico de gallo, homemade tortillas, and a variety of flavorful spiced rice and bean dishes every day. Plus fresh, tropical fruits like papaya, mango, and pineapple and homemade guacamole at every meal including breakfast! 

So when I knew I’d be returning this summer, I began to make a list of all the food I wanted to eat. First on my list was Trits, an ice cream sandwich treat. Next was the green Takis that come in a white bag. I think they’re a spicy guacamole flavor, but all I know for sure is that they’re tasty! Supposedly these are also available in the US, but I haven’t found them yet. 

The other things on my list were not snacks I needed to buy. Instead, these are meals that the mission chefs cook. Empanadas, beef stew, chicken with rice, fajitas, and the best garlic bread ever! 

I’ve been in the country now for just a few days and all my food cravings are already satisfied. Last night for dinner I had steak and chicken fajitas with french fries and salad and a mint lemonade. All freshly prepared to order, including the drink! I had a delicious chicken empanada for breakfast with a cup of locally grown coffee. For lunch we stopped by a new cafe for an orange cold brew and chicken pesto panini with arugula, mozzarella, and tomato. And then I ended my evening with Trits!

The day was full of more than just food. We cleaned, did tons of laundry, shopped for groceries, had meetings, made beds, set up the pantry, and ran miscellaneous errands. 

A full day. Satisfied. Both in hunger and in heart.
